Add tomatoes, tomato paste, tomato sauce, water, sugar, basil, oregano, salt, and pepper. Simmer 30 minutes.

Mix ricotta, egg, salt, 2 cups mozzarella, and 1/2 cup Parmesan.
Cook Noodes:
Boil noodles as per package instructions. Drain and rinse with cold water.
Assemble:
Preheat oven to 375°F (190°C).
Spread 1 cup meat sauce in a 9×13 inch dish. Layer 4 noodles, 1/3 cheese mixture, and 1/3 meat sauce. Repeat layers twice.
Top with remaining mozzarella and Parmesan.
Bake:
Cover with foil. Bake 25 minutes.
Remove foil and bake for 25 more minutes. Cool for 15 minutes before serving.
